Connor's Meatloaf

Servings: 2
I normally don't like meatloaf, but I really this version that Connor created.

Ingredients:

Loafs:
1/3 cup crushed croutons or breadcrumbs (I like to use the croutons that come in the big bag from Costco)
2 tablespoons milk
2 shakes parsley
1.5 tablespoons worcestershire sauce
3/4 tablespoon yellow mustard
1 teaspoon garlic powder
1 teaspoon onion powder
1/2 teaspoon salt
1/2 teaspoon pepper
3/4 pound of hamburger

Glaze:
1/4 cup ketchup
2 packed tablespoons of brown sugar
2 teaspoons apple cider vinegar

Directions:

1. Preheat over to 425, making sure the oven rack is placed in the middle of the oven.
2. Mix crouton crumbs, milk, parsley, worcestershire sauce, mustard, onion power, garlic powder, salt and pepper together.
3. Mix in ground beef until uniform with hands, mixing throughly.
4. Shape into patties.
5. Heat small amount of oil in pan until rippling, brown patties on both sides (3-5 minutes total).
6. Mix glaze ingredients together until smooth.
7. Place loafs in pan and cover with glaze.
8. Make 18-20 minutes until center of loaf reaching 160 degrees.

Sweet and Sour Chicken

Adapted from Mel's Kitchen Cafe
Serves: 2

Ingredients:
1 chicken breast
salt and pepper
1 cup of corn starch
2 eggs beaten
oil
3/4 cup sugar
4 tablespoons ketchup
1/2 cup apple cider vinegar
1 tablespoon soy sauce
1 teaspoon garlic salt

Directions:
Preheat oven to 375.
Cut chicken breast into small bite size pieces. Start to heat pan with a small amount of olive oil in it. Coat chicken in corn starch. Dip chicken in beaten eggs then place on heated pan. Cook chicken on pan until lightly browned on all sides, 1-2 minutes. Place chicken in baking dish. Lightly salt and pepper.

In a separate dish mix the sugar, ketchup, cider vinegar, soy sauce and garlic salt together. Pour over chicken.

Bake chicken for 1 hour, periodically turning the chicken while it is cooking.

Serve chicken over rice.

Italian Meatball Subs

Adapted from Mel's Kitchen Cafe.
Makes 4-6 servings

Meatballs:
1 cup breadcrumbs
3/4 cup shredded parmesan or mozzarella cheese
1/2 cup milk
1/2 cup beef broth
1/2 cup fresh parsley or 2 tbs dried parsley
2 eggs lightly beaten
1.5 tablespoons oregano
3 cloves minced garlic
1.5 teaspoons salt
2 teaspoons pepper
2 teaspoons basil
1/2 teaspoon red pepper flakes
2 pounds ground beef

In a large bowl mix all ingredients except the ground beef. Let sit for 10-15 minutes. Mix in ground beef. Form into shape of meatballs. Dredge meatballs in flour and then bake at 400 for 20 to 25 minutes. Serve on french bread with your favorite red sauce with cheese melted on top.

These meatballs freeze great. Also, I have found that the meatballs taste better if you form them in the morning, place in refrigerator, and then bake later in the day.

Velvet Fudge Sauce

Makes 12 servings

2 cups powdered sugar
1 cup evaporated milk
1/2 cup butter
1 tablespoon corn syrup
1 cup semisweet chocolate chips
1 teaspoon vanilla

Mix all ingredients except vanilla over medium heat. Stir and cook until it boils-then reduce heat and cook 8 minutes stirring constantly. Take off heat,, add vanilla and enjoy!

This can be stored in the refrigerator for several weeks. Simply take the amount to you want to use out and heat in the microwave to use.

Carmel Sauce

Carmel Sauce 

1/2 cups real butter 
1 1/2 cups brown sugar 
3/4 corn syrup 
1 can sweetened condensed milk

Boil over med heat for 5 minutes-stirring continually-then add 1tsp vanilla & pinch salt 
Great with apples (serve warm) 

Chocolate Molten Cake

Hot Fudge Pudding Cake

1 cup flour 
2 tsp baking powder 
1/4 tsp salt 
1/2 cup sugar 
2 TB cocoa 

Stir in 1/2 cup milk and 2 TB oil 
Then add nuts if want
Pour in 9x9 

Mix together 
1 cup brown sugar 
1/4 cup cocoa 
Sprinkle over cake mixture 

Then pour 1 3/4 cup hot water over everything 

Bake at 350 degrees for 45 minutes 


Aunt Kim's Broccoli Salad

Broccoli Salad 

2 bunches broccoli 
1 lbs bacon- cooked & crumbled 
1/2 cup chopped onion (or onion powder)
1/2 cup raisins (or craisins) 
3/4 cup sunflower seeds (or cashews)

Dressing  
1 cup mayo or miracle whip 
1/2 cup sugar 
2 TB vinegar 

Combine and chill 

Sloppy Joes

Sloppy Joes 

3 1/2 lbs. Hamburger 
1/2 c. chopped onions 
2 cups celery (optional)
2 cups carrots (optional)
1/3 cup vinegar
1/4 cup brown sugar 
1 TB dry mustard 
1 TB salt 
1/2 cup water 
2 1/2 cup ketchup 

Minestrone

Minestrone 

2 T. oil 
1/4 lb. Ham or Salami chopped
1 large onion 

Fry until onion is soft but not brown put into a large kettle then add

1 med carrot chopped
1 stalk of celery chopped 
1 cup tomato juice 
1 can undrained kidney beans
2 qt. beef broth or bouillon cubes. 

Simmer covered for 30 minutes then add 

1 large potato chopped
1 T. dried basil 
1 small clove garlic or 1/4 garlic powder 
2 tsp salt or as needed 

cook uncovered 15 minutes add 

1/4 small head cabbage chopped 
1-2 c. canned green beans (cut)
1/2  c. macaroni noodles 

simmer until soup is thickened and cooked sprinkle with parmesan cheese if desired 
  

Great Grandma Barclay Chili Sauce

Chili Sauce 

3 qt chopped peeled tomatoes                1/2 c. brown sugar 
3 c. chopped celery                                2 c. white sugar 
2 c. chopped onion                                *3 tsp pickling spice 
1 c. chopped green peppers                   1 c. white vinegar 
1 scant tablespoon salt 
1 scant teaspoon pepper 

Grind with med. grinder blade. Put all together in large pan -- Cook and stir occasionally until it begins to thicken. *(Put pickling spice in small bag & throw away when finished) Water bath for 15-20 minutes.  

Pumpkin Pie


Libby's Famous Pumpkin Pie 

3/4 cup Sugar                              1 can (15 oz.) LIBBY'S 100% Pure Pumpkin
1/2 tsp salt                                   1 can (12 fl. oz) CARNATION Evaporated Milk
1 tsp. ground cinnamon              1 unbaked 9-inch deep-dish pie shell
1/2 tsp. ground ginger 
1/4 tsp. ground cloves                *1 3/4 tsp pumpkin pie spice may be substituted 
2 large eggs 

Mix sugar, salt, cinnamon, ginger, and cloves in a small bowl. Beat eggs in large bowl. Stir in pumpkin and sugar-spice mixture. Gradually stir in evaporated milk.

Pour into pie shell.

Bake in preheated 425 degree oven for 15 minutes. Reduce temperature to 350 degrees and bake for 40-50 minutes or until knife inserted near center come out clean. cool on wire rack for 2 hours serve immediately or refrigerate.

New Bride's No Fail Pie Crust

Pie Crust 

--For 2 crust pie 
2 cups sifted flour 
1 teaspoon salt
2/3 cup shortening
1/2 cup cold water 

Mix flour and salt together with a fork in a medium sized bowl. Remove 1/3 cup and place in a small bowl. Set it aside.
Now, cut the shortening into the large bowl of flour/salt with a pastry cutter until the mixture is pea sized. 
Add 1/2 cup cold water to flour in the small bowl. This will make a paste. now add the paste to the larger bowl and stir until the flour sticks together. Dont stir too much, Just till it is sticking together.
The dough will be quite sticky. that's okay. Divide into equal balls.
Turn 1st ball out onto a heavy floured cupboard. Roll out. Continue to sprinkle flour on the mixture as needed.
Lift the dough by rolling onto the rolling pin. 
Set carefully in the pie pan 

--For one single crust pie
1 1/2 cups sifted flour 
1/2 tsp Salt 
1/2 cup shortening 
3/8 cups cold water 

For Baked single crust pie shells 
Trim 1/2 to 1 inch beyond edge: fold under and flute edge. Prick bottom and sides well with fork. Bake at 450 degrees for 10 to 12 minutes or till golden.

Chicken and Rice

Chicken and Rice 

1 can Cream of Chicken                1 1/2 cups rice
2 cans of Milk                                Frozen chicken tender or chicken breasts
1 Packet Onion soup Mix

Mix together Cream of Chicken, Milk and Onion soup Mix and pour into a greased 9 x 13 Pan

Pour the rice into the sauce and put frozen chicken on top 

Bake at 300 degrees for 2 1/2-3 hours if longer than 3 hours turn down to 275 

Grandma's Spaghetti

Grandma's Spaghetti 

1 lb Ground Beef                                         1 tsp. dried oregano 
1 c. Chopped onion                                     1/2 tsp dried basil leaves
1/2 c. pepper (opt)                                        1/8 tsp. pepper                   
1 clove garlic                                                1 bay leaf 
1 qt tomato juice & 2 T cornstarch 
  or 3 cans of tomato sauce
1tblsp sugar
1 1/2 tsp salt 

Brown the meat add the onion, pepper, and garlic 

Add Remaining ingredients simmer 30 minutes. Uncover and cook until thick



Chex Mix

Chex Mix

4 c. Wheat Chex                                       1 1/2 Cubes butter
4 c. Corn Chex                                         2 1/2 T. Worcestershire
4 c. Cheerios                                            1/4 tsp. garlic, celery & onion salt
4 c. Pretzel Sticks                                     or  2tsp. all season salt
2 c. Nuts (peanuts or mixed)

Preheat oven to 250 degrees

Melt the butter in a small saucepan and add the remaining ingredients.

Pour Sauce over cereal and mix put in oven and bake for 45 minutes stirring every 15 minutes
